Sweet Potato Burritos

I know, I know, I thought it sounded crazy too when I came across a recipe for them here while looking for vegetarian dishes. However, upon further reflection, it sounded like something that might be really quite tasty, especially since most of the ingredients were already in my kitchen. So tonight I tried it.

I started by making my own tortillas with flour, salt, baking powder, oil, and water.

While letting the dough rest, I cut up about half of a large sweet potato into chunks and put it on the stove to boil.

After finishing the tortillas, I chopped up an onion and some garlic and commenced to saute them, caramelizing the onions just a little. To the onions and garlic I added some cooked kidney-bean-like beans that I had stored in the freezer for just such an occasion. I added a little more oil and quite a bit of water, as well as some salt, cumin, and chili powder.

Meanwhile, the potatoes had cooked through, so I drained and mashed them.

I also mashed the beans with the onions and garlic. Then I shredded some cheese and proceded to assemble the burritos.

On each tortilla I put some mashed sweet potato, some of the bean mixture, and some shredded cheese. Then I wrapped it all up and placed the burritos in a pan to bake in the oven for a few minutes.

While they were baking, I chopped up another onion, some garlic, a pepper, and a bunch of little tomatoes to make a salsa.

Over all, I would say they turned out quite well and I would make them again.
